Low carb protein muffins with chia seeds

Super easy to prepare, absolutely yummi and full of protein! 🙂

This is what you need:

  • 4 eggs
  • 4 egg whites
  • 2 tablespoons of chia seeds
  • 1 middle sized onion
  • 1 handful dried tomatoes
  • 100 gr of baby spinach leaves
  • salt, pepper, italian spices to taste

This is how it’s done:

  • preheat the oven to 180 degrees Celsius (356 F)
  • mix the eggs, egg whites and chia seeds in a large bowl and stir well
  • chop the spinach, dice the onion and tomatoes and add everything to the mix in the bowl
  • add salt, pepper and spices to taste
  • stir well
  • fill the mix into greased muffin forms
  • bake for about 30 minutes in the oven
